Halkidiki olives are large, oval, pale green Greek olives commonly harvested while still young in October. Often referred to as Chalkidiki, they grow exclusively in Greece's Halkidiki region, which is adjacent to Mount Athos. You may also hear these big fruits called "donkey olives."
Greek /Cretan green olives are called elitses, meaning "tiny olives." The formal name is koroneiki. The island of Crete is famous for these tiny olives. They are also cultivated in Messinia, on the Grecian Peloponnese peninsula, and on the island of Zakynthos.
Nafplion Green Olives, grow in the valley of Argos, in the Eastern Peloponnese peninsula. These small, light-green olives, are slit before being cured in brine, allowing the spices and flavors to saturate into the olive. The Nafplion olives offers a firm and crunchy texture with nutty and smoky flavors.
Olives that are being processed as Green olives will be picked when they have reached full size but are still green. Olives that are left on the tree longer will grow darker or more purple in color, such as the Kalamata. They can also be left on the tree longer until they become “ripe” olives.
